Trapped in a Fat Chick's Taco Stuffed Peppers
I have only made stuffed peppers once in my life. It was back in April of this year. It was Hannah's Stuffed Peppers. Hannah was on The Biggest Loser. Her recipe ended up on the Jennie-O turkey website. I tried it. I liked it. I decided that making Taco Stuffed Peppers would be a wicked awesome idea. It took me nearly four months, but I finally made them!I didn't use a recipe. I just sort of wung it. We had a pound of frozen ground beef that was 96% lean I think. It could have been 93% I'm not sure. We also had about a cup of left over rice that my husband had been eating this week. I'm not sure what he put in the rice, but it was spicy! I cooked the ground beef per the taco mix instructions. I then mixed in the rice. I was going to mix in some diced tomatoes, but I knew I would have left overs from my left overs so I skipped the diced tomatoes.
I took the stem out of an orange bell pepper and then cut it in half from top to bottom. I took the seeds out and set them two halves down in my meatloaf pan. I was making dinner for myself since hubby wasn't home. You can prepare the stuffed peppers early, but you shouldn't cook them early. Peppers reheated in the microwave are YUCKY!
Okay so once the peppers were in the meat loaf pan, I spooned the rice and beef mixture into them. I heaped them just a smidge. I poured a little bit of chicken broth into the bottom of the pan. I then covered the pan with aluminum foil and put it in the oven at 350 for 30 minute. It was perfect! The pepper was cooked, but not over cooked. It still had a good pepper flavor and wasn't all mushy nasty. Oh I forgot to say that I put a little bit of shredded cheddar cheese on the top after I took it out of the oven. It was a little spicy because of the rice, but it wasn't too bad. I had some homemade blueberry frozen yogurt afterwards and it helped cool my mouth down.
This was a hit for me and I plan on making these again. I was going to do them tonight, but hubby was home and ended up cooking soup. If we have enough peppers and meat mixture, I will make them tomorrow for dinner or maybe lunch. It depends on how hungry we all are.
