I am super excited even though the picture looks a little fuzzy. I'm on a mission to stop wasting so much food. A lot of the recipes that I try use a little bit of this and a little bit of that, but then I'm left with ingredients that I don't finish. We also have a tendency to buy ingredients without a clear plan of what we're going to do with it. I decided on my two meals that I'm going to cook this week, but then I was going to be left with half a pepper and half a zucchini. I try to cook breakfast on Sundays, but I typically don't blog about it because it's nothing special. Typically just eggs and bacon, but today was different! I kinda sorta almost made a recipe! The best part is............It tasted GOOD! It wasn't just edible, but I liked it and so did my husband! I do have to admit that this thing wasn't some crazy masterpiece or anything, but it's still impressive since it was me, and I do everything with a recipe. Well, there are times where I use a recipe and then make minor adjustments to it, but it always starts with a recipe. This didn't though!
Trapped in a Fat Chick's Zucchini and Pepper Egg Scramble
1/2 a zucchini shredded1/2 a red bell pepper chopped up
6 eggs
1/4 cup milk
1 tsp garlic powder
sprinkle of shredded mozzarella cheese
a splash of olive oil
I put the olive oil in the frying pan and set the pan on medium while I chopped up the pepper. I had already shredded the zucchini and set it in a strainer to drain. Not much actually drained out, so I think that step was not needed, but I've had some pretty wet zucchini before so I thought I should try to drain it. Once the pepper was cut up, I tossed the pepper and the zucchini into the frying pan. I stirred it around a bit. While it was cooking, I cracked the eggs into a small bowl, added the garlic powder and the milk. I then beat them with a fork for a minute or so. I had intended to crumble up the left over bacon from yesterday's breakfast, but then I remembered that the boy child needed to eat too and he gave up meat for lent. I gave the zucchini and peppers a little bit longer to cook and then I tossed the egg mixture into the frying pan. I emptied the dish washer while periodically stirring the eggs. I didn't get the dishwasher refilled, but at least I got it emptied while cooking breakfast. Once the eggs were all cooked, I tossed them on a plate and sprinkled them with mozzarella cheese.
On the plate, you'll see the eggs as well as the bacon that I mentioned. It's turkey bacon, so it's not that bad for me. You'll also see this not so healthy biscuit on the plate. The biscuit was my husband's creation. It's a Grand's biscuit with a Baby Bell cheese wheel stuffed inside. A lot of the cheese melted out of them though, but they were still super yummy. As long as I don't go back and eat the rest of the pan, I'm okay with the fact that I ate one even though it wasn't exactly healthy.
